
Pork roast with apples
Description
The recipe won't take much time. You can serve the roast pork hot as a main dish or cold as sliced meat. It's best to use pork tenderloin for the roast, but in that case reduce the cooking time to 50 minutes, as it is much more tender. Choose firm, sweet-sour apples—they won't fall apart during cooking but will remain soft in pieces. You can omit the rosemary or substitute it with thyme. Serve hot.

Prepare all the necessary ingredients for making pork roast with apples. Wash the apples thoroughly, rinse the pork under cold water, and pat dry.

Place the meat in a bowl and pour kefir over it. Let it sit on the kitchen counter for two hours.

While the pork is marinating in kefir, prepare the first marinade. To do this, pour water into a saucepan, add salt and sugar, and bring to a boil. Add allspice, chili pepper, coriander, and bay leaf, bring to a boil again, then remove from heat and let cool completely.

Remove the meat from the kefir, wipe it off, and transfer it to a clean container. Pour the cooled marinade over the pork and let it marinate for 12 hours, turning it several times.

Remove the pork from the marinade and pat dry. Mix mustard, garlic, vegetable oil, ginger, salt, and paprika. Rub the mixture all over the meat.

Fold the foil into 3-4 layers, and place the diced apples and a sprig of rosemary on it.

Place the meat on the apples and tightly wrap it in foil. Pour 200 milliliters of water into a baking dish and place the pork in foil into the dish.

Place the meat in a baking dish into a preheated oven and bake at 180 degrees for 1.5 to 2 hours.

Unwrap the pork roast and bake for another 15 minutes. Then remove it, and let the meat rest for 15–20 minutes. Slice the pork roast and serve with apples as a side dish.
