1. Wash the meat thoroughly and pat it dry. Remove any excess membrane from the meat. Rub the meat with salt and pepper. Let the meat sit for a while in this state. Finely mince the garlic or press it through a garlic press. Finely chop the fresh ginger root. Finely chop the rosemary sprig if it's fresh. Mix all these ingredients together in a separate dish. Add mustard and mix well.

2. Thoroughly rub the entire piece of meat with this mixture. Wrap it in a plastic bag. To allow the meat to absorb the flavor of all the spices, leave it overnight in the refrigerator. The next day, take the meat out of the refrigerator and wrap it in several layers of aluminum foil. Preheat the oven to 200°C (392°F). How long should the meat be baked? Calculate as follows: 20 minutes per 500 g of meat, plus an additional 20 minutes for the whole piece. If you use 1.5 kg of meat as per the recipe, you will need 1 hour and 20 minutes. Let the cooked pork cool slightly, then slice. Serve with fresh vegetables and horseradish.
