Step 1

Prepare the ingredients. I don’t like fatty meat, especially on a holiday table where there are usually lots of mayonnaise salads. I use the leanest meat. Guided by your own taste, buy a piece you like. Wash it thoroughly, pat it dry, and prepare the spices and oil.

Prepare the meat marinade: combine oil, mustard, salt, pepper, herbs de Provence, and garlic. Mix well.

Rub the meat evenly on all sides with the aromatic oil. Wrap it in foil and refrigerate for 4–5 hours.

Remove the marinated meat from the refrigerator, wrap it tightly in several layers of foil, and place it in the oven for 3–4 hours at 180°C. Bake.

30 minutes before the end of baking, open the foil, baste the meat several times with the fat that has collected in the foil, and brown the top. Then wrap the foil tightly again and refrigerate the meat for 12 hours. After that, the roast can be considered ready. Slice and serve with herbs and vegetables. Enjoy!
