Beef Buzhenina in an Oven Bag

Description

It works for both special occasions and everyday meals. Buzhenina cooked in a roasting bag turns out very juicy and tender. Before baking, sear the meat over high heat for just a couple of minutes so the outer layer sets. The buzhenina will hold a nice shape if you compact the piece of meat with sturdy kitchen twine. For seasoning, we use garlic, pepper, and meat spice mix; if desired, you can add carrots and other spices to taste.

    Prepare the necessary ingredients.

    Prepare the marinade for the meat. Pour water into a saucepan, add a bay leaf and peppercorns, and sprinkle in salt. Place the container with the liquid on the stove, bring to a boil, and simmer for several minutes until the salt is fully dissolved. Remove the marinade from the heat and cool completely.

    Rinse the meat, place it in a deep container, pour the marinade over it, cover with a lid, and refrigerate for 12 hours. It's more convenient to do this overnight.

    After some time, remove the meat from the marinade and pat dry with paper towels. Peel the garlic cloves and slice them. Make incisions in the meat with a knife and insert the garlic inside. Rub the meat with spices on all sides. To help the piece of meat hold its shape, wrap it tightly with sturdy string.

    Place a skillet over the heat, pour in a little oil, and heat it until smoking hot. Into the scorching oil, place a piece of beef and sear over maximum heat for literally about 3 minutes on each side.

    After that, transfer the meat into a roasting bag. For aroma, add a few sprigs of rosemary.

    Tie the bag tightly, make several small punctures with a wooden skewer so steam can escape. Preheat the oven to 180°C and place the prepared roast inside. Roast the pork for the next 60–90 minutes. When the time is up, turn off the oven but do not remove the meat; let it cool in the warm oven.

    Once cooled, remove the meat from the cooking bag and drain the meat juices. Slice the buzhenina into portion-sized pieces and serve.
