For roast pork, it's best to use a pork leg. Wash and dry the meat. Peel the garlic and cut it into thin cloves with sharp tips.

Then we will stud the meat with garlic on all sides. Pierce the meat with a knife and insert a piece of garlic into the hole.

Let's prepare an aromatic marinade. Pour oil into a small bowl and add salt, pepper, and the remaining spices. You can use any spices according to your taste.

Mix everything until smooth.

And spread the resulting spice mixture all over the meat.

Cover the meat and put it in the refrigerator for about 8-10 hours.

If your meat is not as evenly shaped as mine, but rather flat, you can roll it up and tie it with cotton string. Place the meat onto a sheet of foil.

And wrap it tightly. Then wrap it in another layer of foil to prevent the meat juices from leaking during baking.

Transfer the wrapped meat to the baking dish you'll be using, and place it in a preheated oven at 200 degrees for 1.5 to 2 hours. I had a 1.5 kg piece, which took 2 hours to roast.

The baking time is up, unfold the foil and pierce the piece of meat with a knife to the center. If the juice is clear, the meat is done.

I'm putting the meat back in the oven to brown it. Fifteen minutes will be enough.

I leave the meat to cool in the foil and in the juice released during baking. The meat will absorb some of this juice and become juicier. Once cooled, the roast can be sliced and served.
