To prepare the dough, you first need to make a starter: dissolve 2-3 grams of dry yeast in 130 ml of warm water. Once the yeast has dissolved and activated, add it to 85 grams of flour and knead into a starter. Cover the bowl with plastic wrap and let it rise in a warm place for one to two hours.

Now you can knead the dough using the sponge. First, dissolve another gram of yeast in 60 ml of water, add sugar, stir well until the sugar dissolves, and then add this to the sponge. Mix the flour (345 grams) with salt and add it to the sponge. You can knead the dough with a mixer at low speed. The dough will be very dense and stiff, making it difficult to knead, but you need to make an effort.

At the end of kneading, add softened butter and roll the dough into a ball.

Then divide the dough into 6 parts, roll into smaller balls, cover with plastic wrap, and let rest for about 20 minutes.

Then, use your fingers to stretch the hole in the center to form bagels. Make them the final size according to your preference. Cover the baking sheet with the bagels again with plastic wrap and let them rise for 1.5–2 hours.

Bring 2 liters of water to a boil in a saucepan, add honey, and stir. Carefully place the bagels into the water for 5 seconds on one side, then flip and hold for another 5 seconds on the other side.

Carefully remove the bagels from the water (you can use a slotted spoon), shake off excess water. Place them on a parchment-lined baking sheet and generously sprinkle with poppy seeds.

When the bagels have dried slightly, place them in a preheated oven at 240°C for 16 minutes. Actually, the time is individual and depends on your oven and the size of the bagels. Keep an eye on them to make sure they don't burn.
