
Brynza in bacon
Description
Perfect with the table and drinks. This appetizer has Bulgarian origins, and you can be sure: if a recipe has Bulgarian roots, brined cheese is always in it. Here too, brined cheese is the main ingredient. If you have a feast or celebration coming up, I recommend serving this traditional Bulgarian appetizer—brynza in bacon—instead of the usual cheese and cold cuts platter. Recipes where brined cheese is the star ingredient are quite rare, but this one is truly a winner. Preparing this appetizer won’t take much more time than slicing the same cheese and smoked meats, but it will look far more impressive on the table. It can be served warm or chilled.

For this appetizer, Bulgarian brine cheese is ideal—it works well due to its texture. But, in principle, you can also use Caucasian brine cheese.

Cut the brynza into cubes about 3 cm on each side.

If the bacon is whole, slice it into thin strips—you'll use them to wrap the brynza.

Now simply wrap the brinza cubes in bacon slices—one cube per slice.

If you want to make this appetizer outdoors, thread the feta wrapped in bacon onto skewers (two is better). However, we are making the appetizer at home, so skewers are not necessary.

Place our bryndza wrapped in bacon on a grill pan. A very important point—first place the seam side down (where the bacon overlaps) so the bacon seals together under the heat. Fry for about 1 minute on each side over medium heat. Another important point—fry without oil.

Before serving, sprinkle with savory or another favorite spice (coriander works too). The appetizer is best eaten hot. Enjoy!
