
Homemade Bryndza from Cow's Milk
Description
A tasty snack for any gathering. Bryndza is easy to make. Store-bought products will work, but keep in mind that the higher their fat content, the greater the bryndza yield. I use milk with 2.5% fat and sour cream with 15% fat. Add salt to taste. To make the bryndza very salty, soak it in salted whey. The specified amount of ingredients yields 250–300 grams of finished product.

Prepare the ingredients for making homemade brynza.

Pour the milk into a heavy-bottomed saucepan and place it over heat.

Break the eggs into a bowl.

Add salt to taste.

Add sour cream.

Beat the eggs well with sour cream and salt.

When the milk in the saucepan begins to boil, pour in the mixture of eggs, sour cream, and salt. Stir constantly and bring the mixture to a boil. Simmer for five minutes over low heat. You will see the liquid begin to curdle and turn into flakes. Then the whey will start to separate, and curds will appear.

Let the resulting mixture cool for 10–15 minutes. Then strain it through a sieve or colander lined with several layers of cheesecloth. Place the sieve over a bowl to catch the whey.

Tie the cheesecloth in a knot and hang the brine cheese over a bowl to catch the whey.

After three hours, place the weight on the brine and refrigerate overnight. In the morning, remove the cheesecloth.
