Lingonberry marshmallow

Description

Making meringue is very easy if you follow the step-by-step recipe. For a more intense flavor and color, you can increase the amount of lingonberry puree, correspondingly reducing the amount of apple puree.

    Prepare the ingredients.

    Remove the cores from the apples, place them in a heatproof dish, and bake in the microwave for 5–7 minutes.

    Rub the cranberries through a sieve; you can first use a blender, and then rub the berry puree through a sieve.

    Remove the pulp from the baked apples and also rub the puree through a sieve.

    Into a mixing bowl, pour 1 egg white and beat until soft peaks form. Then gradually add 250 grams of sugar while continuing to beat.

    Add the apple puree to the egg whites and beat again until fluffy foam forms.

    Pour water into a saucepan, add agar-agar and 250 grams of sugar, stir, place over heat, bring to a boil while stirring, then cook for 2 minutes from the moment it starts boiling.

    Remove the sugar syrup with agar-agar from the stove, let the bubbles "settle," and slowly pour it into the egg white mixture in a thin stream, continuing to whisk constantly.

    Add the lingonberry purée to the whipped marshmallow mixture and continue beating until ready, until the mixture begins to thicken and the mixer leaves distinct, well-defined traces. Do not delay here, as agar-agar marshmallows will start to set at around 40 degrees Celsius.

    Transfer the marshmallow mixture into a piping bag and pipe the marshmallows onto预先 prepared silicone mats or parchment paper. Dry the marshmallows—the drying time depends on the quality of the agar-agar used. My marshmallows set in just 2 hours, but in some cases it may take much longer, up to 6–8 hours.
