
Bruschetta with Roasted Pepper
Description
A delicious appetizer for any gathering. Very tasty and juicy bruschetta can be prepared for a holiday table or a buffet. The appetizer comes together quickly if you bake the peppers in the oven ahead of time and toast the bread slices in a pan, letting them cool. You can also use ready-made vegan croutons or toasts. The appetizer is ready. Serve immediately.

Prepare the listed ingredients. Bell pepper is best purchased already roasted, the "Paprika" variety. It is juicier and more colorful than other varieties. You can roast it in the oven in advance for about 30 minutes, then peel and remove the skin and seeds.

Cut the baguette into slices no more than 1 cm thick. You can use white, black, or rye bread.

Peel the garlic cloves and slice them. Heat vegetable oil in a skillet and sauté the garlic slices in it for 1 minute. Then remove the garlic and place the bread slices in the oil. Fry for about a minute on each side until golden brown.

Place the croutons on a plate or serving dish and let cool for 5 minutes. Then arrange the roasted pepper pieces, peeled and seeded.

Sprinkle with ricotta on top. You can add the cheese either moist or slightly dry; roasted pepper will give the bruschetta juiciness.

Garnish the bruschetta with fresh herbs, season with salt and pepper. Serve.
