
Broccoli in Batter

Break the broccoli into florets and rinse thoroughly under running water.

Drop the broccoli into boiling salted water for 3–4 minutes.

Transfer the boiled broccoli to a colander and, while the water drains, prepare the batter.

For the batter, mix the beer, eggs, salt, sugar, and pepper well. Add the flour and mix thoroughly so there are no lumps. If you want a thick batter crust, make it thicker.

Heat the vegetable oil in a small saucepan. Dip the florets in batter and carefully lower them into the hot oil. Fry on all sides, then transfer the cooked pieces to paper towels or a napkin so the excess fat is absorbed.
