
Broccoli in Orange Sauce

It's easy to prepare and, most importantly, very quick: in 20-25 minutes you'll have an exquisite lunch or dinner ready. I think children will also enjoy this dish—just omit the wine and cashews in that case.

Separate the broccoli into florets and blanch: drop into boiling water for a few minutes, then remove and place on ice.

Toast cashews for a few minutes in a dry hot skillet.

Add oil to the same skillet and sauté the carrot, cut into strips, for 2-3 minutes.

Then add broccoli, mix well and sauté for 2-3 minutes.

Squeeze the juice from the orange, add wine, saffron, salt, and pepper. Bring to a boil, reduce heat to low, and simmer for a few minutes.
