
Broccoli with Nuts
Description
Perfect for the table and with drinks. I liked this unusual way of preparing broccoli right away: you get a fairly thick but light paste. Besides, broccoli tastes even better this way—the nuts add an original flavor note, and garlic adds a touch of piquancy. To make broccoli with nuts, you can use either fresh or frozen broccoli.

Wash the broccoli, break it into florets, and boil it, but do not overcook it: you do not want the broccoli to fall apart. Toast the nuts in a dry hot skillet or warm them in the oven. Then add the broccoli, nuts, a peeled and chopped clove of garlic, and Parmesan to a blender.

Grind everything to a purée-like consistency.

Add the olive oil and lemon juice, season with salt and pepper to taste. Mix everything again.

Ready broccoli with nuts can be served with spaghetti or simply as a spread on bread. The dish works well as both a dressing and a snack.
