
Broccoli with mushrooms in creamy sauce
Description
The dish is prepared without unnecessary complications. It's absolutely not mandatory to serve broccoli with mushrooms in creamy sauce specifically with pasta—you can choose any side dish to your liking. It pairs well with couscous, buckwheat, or rice. Separate the broccoli into florets. Bring water to a boil and add a little salt. Peel the garlic and finely chop it. Rinse the mushrooms and slice them as you prefer.

Take a separate saucepan or deep skillet. Pour in 1 tablespoon of olive oil. Then add the garlic and mushrooms. Sauté for a few minutes until the mushrooms are slightly browned and begin to soften. Remember to stir constantly, otherwise the garlic will burn. Season with salt.

Fry for another 5 minutes, the mushrooms should darken. This is what you'll end up with. Transfer the mushrooms with garlic to a plate and set aside for now.

Drop your favorite pasta into the boiling water. I like to use fettuccine or any other pasta. Don't forget to add 1 tablespoon of olive oil. Place the broccoli into a colander, then put the colander into the pot with the boiling pasta. Cover everything with a lid and cook for about 10 minutes (or until the pasta is al dente, partially cooked).

Add butter (2 tablespoons) to the saucepan in which the mushrooms were cooked. Heat it, but do not overheat—make sure it doesn't burn. As soon as the butter melts, add 2 cups of milk to the saucepan. Slightly increase the heat and continue cooking, stirring. Add salt and ground black pepper.

Now, in a separate container, mix 1 cup of milk with 2 tablespoons of starch. Stir well. Pour the resulting mixture into the saucepan with the milk. Continue cooking the sauce, stirring occasionally.

Grate one and a half cups of Parmesan. Add it to the sauce and continue cooking.

As soon as our sauce begins to boil and thicken, it means the cooking time is coming to an end. Turn the heat down to very, very low.

Take out the broccoli and rinse the pasta. Now add the broccoli and mushrooms to our sauce. Mix well. The sauce should distribute evenly over the broccoli and mushrooms.
