In a thick-bottomed saucepan (or over a double boiler), melt the butter. Add the egg yolks and water.

Constantly stir the mixture - it will thicken quickly when heated.

Meanwhile, boil the broccoli. You can cook it either steamed or in the usual way. I like my cabbage crunchy, so I cook it for a maximum of 3-4 minutes.
