Description

The recipe won't take much time. Brudet is a dish consisting of fish stewed in broth, very popular in Croatia. In Italy, a similar dish is called brodetto, in Greece—bourdeto. The fact is that all three variations have one thing in common—fish is cooked in broth, and in Venetian, the word "brodeto" means "broth." The Croatian, Italian, and Greek versions of this dish are very similar, with insignificant differences. If you've ever traveled along the Adriatic coast, I'd bet you've tried or had the chance to taste brudet. The dish is fantastically delicious, and with fresh ingredients, it's easy to prepare at home. Here's how. Serve hot.

    First, you need to marinate the fish. To do this, mix 2 tablespoons of olive oil, 6 garlic cloves, lemon juice, and chopped parsley. Cut the white fish fillet into small pieces and marinate in the resulting mixture. Marinate in the refrigerator for 2 hours.

    When the fish is marinated, begin the main cooking. Heat a spoonful of olive oil in a deep skillet, sauté the garlic for 30 seconds, then add the onion pieces and cook until soft (about 5 minutes over medium heat).

    Add the tomatoes and fry for another 5 minutes.

    Then add tomato paste, white wine, and bay leaf to the sauce. Bring the sauce to a boil and season with salt and pepper to taste.

    Add the marinated fish and enough broth or water to completely cover the fish (about 2 cups). Bring to a boil. Let simmer for 1-2 minutes.

    After 1–2 minutes of boiling, add the peeled shrimp and mussels, as well as the cherry tomatoes, to the dish. Boil until the shrimp and mussels are cooked through (about 5–6 minutes). Try not to stir the contents of the pan: when preparing this dish, Croatians simply tilt the pan up and down, gently rolling the ingredients over inside. And under no circumstances should you cover the pan with a lid.

    Sprinkle the dish with fresh herbs (if desired) and serve immediately while still hot. That's it, Croatian brodet is ready!
