
Zucchini brizoles
Description
The dish is prepared without unnecessary complications. Making zucchini brizoles is easy, and the result is excellent. First, tender zucchini pancakes are fried, then a filling of minced meat with cheese is prepared. Everything is rolled up into little rolls and baked in the oven. It's a light yet satisfying dish, and you can freely experiment with the filling. Try it! The finished dish can be served at the table.

Prepare all the ingredients.

Grate the zucchini on a coarse grater, add a pinch of salt, mix and let stand for 10-15 minutes.

In a skillet, sauté diced onion until soft. Add the ground meat, garlic clove, salt, and spices to taste. Break up the meat with a spatula and cook for about 5–7 minutes.

Squeeze the zucchini to remove the released liquid, transfer to a deep bowl, add two eggs, flour, salt, and ground pepper to taste.

Mix everything well.

Heat a skillet (about 20 cm in diameter) and grease it with oil. Place the zucchini mixture—approximately 3-4 tablespoons—onto the skillet and spread it evenly. The layer should not be too thin, but not too thick either, otherwise it will be difficult to roll the crepes. Fry the pancakes over medium heat on both sides until fully cooked.

Add the remaining egg and grated cheese to the cooled minced meat.

Place a small amount of filling on the pancake, fold in the edges, and roll it up.

Place the brizoles on a baking sheet or in a baking dish. Brush with sour cream and bake in the oven at 180 degrees for about 25 minutes.
