Prepare the stuffing for brizoles. Grind the meat through a meat grinder, salt and pepper it. Add 1 egg and mix well. Beat the remaining eggs with salt.

Divide the minced meat into 9-10 portions. Form a thin patty from each portion. It's very convenient to use a plastic bag for this. The patty should be slightly smaller than the size of the frying pan you'll use to cook the bryzol.

When the first meat patty is ready, you can start preparing the filling. We'll be placing the filling onto hot patties, so it's better to prepare it in advance. Grate the cheese on a coarse grater, peel and mince the garlic. Chop the dill. Add sour cream or mayonnaise and mix everything together.

Spoon some of the beaten eggs into a separate bowl. Estimate the amount needed — there should be enough egg mixture for all the meat patties.

Remove the top cellophane layer from the meat patty and place the patty, meat-side down, into the bowl with the egg mixture. Remove the remaining cellophane.

Heat a skillet with vegetable oil and place the pancake in it with the egg side down. It's very easy—the pancake slides off by itself.

Sear the egg side of the pancake and flip it to the other side. Cook for another 2-3 minutes.

Place the ready pancake with the egg layer facing down and spread the prepared cheese filling on top.

Roll the pancake into a tube. In the same way, fry and roll the remaining brioche.
