Knead the dough, knead “until clean hands,” until the dough no longer sticks to the hands, becoming smooth and elastic. Place the dough in a bowl, cover with plastic film, and let it rise until its volume increases about 1.5–2 times.

While the dough is rising, work on the filling. Mix in a saucepan 55 grams of sugar, a pinch of salt, 30 grams of flour, cocoa, add 1 egg white, and mix.

Pour 75 grams of hot milk into the sauté pan, mix.

Cook the mixture until it thickens, remove from heat, and stir in 25 g of butter and 50 g of chocolate.

Spread the chocolate mixture onto parchment in a rectangular shape.
