Instructions
- 1
Step 1

Prepare the ingredients.
- 2
Step 2

In the mixing bowl, add buckwheat and wheat flour.
- 3
Step 3

Pour in the water, crack in 2 eggs, add salt.
- 4
Step 4

Knead the dough so that there are no lumps, then place it in the refrigerator for 2 hours.
- 5
Step 5

Pour a tablespoon of vegetable oil onto the heated pan, and add a little butter. If you ended up with too much oil, as I did, you can pour it into the dough.
- 6
Step 6

Pour the batter, fry the pancake over low heat until the top surface of the pancake is moist, then spread it with butter.
- 7
Step 7

While the pancake is frying, slice the ham and grate the cheese.
- 8
Step 8

Lay a ham border and pour an egg into its center. It’s best to crack the egg into a bowl first, so you can carefully pour it onto the pancake. Sprinkle with grated cheese, gently fold the edges of the pancake toward the center, and fry until the egg is cooked.

Step 9

Serve the galettes hot, with herbs and vegetables. Bon appetit! It's tasty and very filling!
