
Brazilian chicken pie
Description
Recipe for making a Brazilian pie. Serve warm or chilled. Perfect with tea.

Step 1

Sift flour, a pinch of salt, and baking powder into a large bowl. In a separate bowl, whisk together milk, eggs, and 4 tablespoons of vegetable oil. Gradually pour the mixture into the flour. Knead until a smooth dough forms, cover, and let rest at room temperature while preparing the filling.

Prepare the filling. In a saucepan, bring salted water to a boil, add chicken fillet and cook for 20 minutes. Transfer to a plate, let cool, then cut into small pieces. Reserve the broth.

Wash and chop the parsley. Place peas, corn, and parsley in a saucepan. Season with salt and pepper to taste. Heat for 2-3 minutes and cool.

Peel garlic and onion, finely chop. Make a cross-shaped incision on the tomatoes, immerse them in boiling water for half a minute, then rinse under cold water and remove the skin. Cut the flesh into pieces. Finely chop the olives. Heat the remaining oil in a saucepan and sauté the onion and garlic until golden brown. Add olives and tomatoes, pour in 2 tablespoons of broth, simmer for 15 minutes. Add chopped chicken and corn with peas, mix well.

On a floured surface, roll out 2/3 of the dough into a large rectangle. Line a greased rectangular pan with it. Place inside

Preheat the oven to 190 °C. Roll out the remaining dough and cover the pie with it. Carefully crimp the edges. Bake the pie for 35 minutes.
