
Brazilian corn cake
Description
The bake comes together simply and quickly. Do not try to remove the finished pie from the tin straight away. It needs to cool and set in the tin. Follow the recipe and you are sure to enjoy the result. Serve cooled or slightly warm.

Prepare the necessary ingredients.

Pour milk into a heavy-bottomed saucepan, add sugar and salt, and stir in the flour.

Stir the contents of the saucepan well. Place over heat and cook, stirring constantly, until thickened. This takes about 10 minutes.

As soon as the mixture thickens, remove from heat. Mix well. Pour into a bowl.

Beat the eggs into the cooled mixture. After each one, beat thoroughly with a mixer.

Add the baking powder to the dough and beat again thoroughly with a mixer.

Take a cake tin, grease it with butter, and sprinkle with breadcrumbs or semolina. Pour in the batter. Bake the pie in an oven preheated to 180 degrees for 40–45 minutes. Adjust for your oven’s quirks.

When the time is up, take the pie out of the oven and press it lightly with your hand—it should spring back. Leave the pie in the tin until it has cooled completely.
