Prepare the crumb mixture: in a bowl, mix flour, cinnamon, sugar, and salt. Cut the cold butter into pieces and rub it into the mixture with your hands until crumbly. Place in the refrigerator.

Separate the egg whites from the yolks and beat at high speed until fluffy and firm. Place the egg whites in the refrigerator.

Next, beat the yolks and sugar for about 10 minutes. The mixture will increase in volume and lighten in color. Then add kefir, vegetable oil, and vanilla. Mix everything well.

Then add the sifted flour with baking powder to the liquid mixture. Gently, without rushing, mix the dough.

Now it's time for the whipped egg whites. Carefully add the egg whites to the batter and gently mix with light motions.

Place half of the dough into a form lightly greased with vegetable oil, then arrange the sliced bananas on top. Sprinkle half of the crumb mixture over the bananas.

Place the pan in a preheated oven at 180 degrees and bake for 45–50 minutes. Let the finished pie cool slightly for about 15 minutes—then it's ready to serve.
