
Sweet Potato Brownies

Prepare all the ingredients.

Wash the sweet potato, pat dry, and bake in the oven until tender at 180°C. Cooking time will depend on the size of the sweet potato.

Once cooled, peel the sweet potato and blend it in a blender until smooth purée.

Add maple syrup, baking powder, a pinch of salt, flour, vanilla flavoring, almond paste, and cocoa powder. Process again until smooth. The dough should be thick, but if it is very stiff and clay-like, you may add a little water or milk to adjust the consistency.

At the end, add coarsely chopped chocolate to the batter. Mix again.

Place the finished batter in a baking pan. I use a square cake pan and line the bottom with parchment paper and foil. Bake for 40–50 minutes. The brownie should form a set top, while staying moist inside.
