
Botlikh Pie
Description
The pie takes its name from the region where it is made. The finished dough can be left for an hour or overnight on the kitchen table. Either way will turn out right and taste good. The pie is traditionally served fully cooled, but it is also very good hot. It can be served with tea or coffee.

Prepare all the necessary ingredients for making a Botlikh pie.

Crack the egg into a bowl, mix, and transfer half to a cup. Add sugar and a pinch of salt to the remaining egg. Beat until light and fluffy.

Add the sour cream to the egg mixture and sprinkle it with baking soda. Mix everything thoroughly until smooth and even.

Add softened butter to a bowl and beat until smooth and homogeneous.

Sift the flour and add it to the egg mixture in portions. Knead a soft, tender dough.

Divide the dough into three parts and shape into balls. Cover the dough and leave at room temperature for one hour.

Wash the dried apricots, cover with water, and bring to a boil over medium heat. Cook for 5 minutes, then drain the cooking liquid.

Blend the dried apricots in a blender until smooth, combine with the sugar and mix.

Toast the walnuts in a dry skillet, let them cool, and grind them. Add sugar to the walnuts and mix.

Roll the first part of the dough into a circle and line an 18-centimeter-diameter pan with it. Spread the dough over the bottom and up the sides of the pan. Sprinkle in the nut filling, reserving two tablespoons.

Roll out the second piece of dough and place it on top of the nut filling. Spread the dried-apricot filling evenly, leaving a small border clear of the edge.

Roll the last piece out slightly larger than the tin and lay it on top. Join the edges of the bottom and top layers and pinch them inward. Brush the top with half an egg and sprinkle with the remaining nut filling. Make several pricks on top.

Place the pie tin in a hot oven and bake at 180 degrees for 25–30 minutes. Let the finished Boitlikh pie cool, remove it from the tin, and serve.
