Botishal with cottage cheese

Description

The pastry is simple and quick to make. You can add boiled potatoes to the cottage cheese filling. The ratio of cottage cheese to potatoes is up to you. The more cottage cheese, the chewier the filling; the more potatoes, the heartier it is. Serve with tea or coffee.

    Prepare the ingredients for making Dagestani flatbreads. It is preferable to use dry cottage cheese with a fat content of at least 5%.

    Sift the flour through a fine sieve into the bowl of a food processor. You can, of course, knead the dough by hand, but to save effort and time you can use a stand mixer.

    Dissolve the salt in water and add the vegetable oil. Stir.

    Pour the resulting suspension into the bowl with the flour and place it on the stand mixer. To knead the dough, use the hook attachment.

    Knead the dough. The finished dough should be soft, elastic, and springy, and should not stick to your hands. Its consistency can be compared to an earlobe. Shape the dough into a ball, cover with plastic wrap, and let rest for 20 minutes.

    For the filling, add salt, baking soda, melted butter to the cottage cheese and mix everything well.

    Divide the rested dough into 6 portions, approximately 160–170 grams each. Round each portion and place on a board. Cover the portions with plastic wrap to prevent drying out.

    Roll each ball of dough into a small round on a surface dusted with flour. Try to make the edges of the round thinner than the center.

    Place part of the cottage cheese filling in the center of the flatbread, about 110 grams.

    Gather the edges of the flatbread over the filling and secure with a knot.

    Carefully roll out the resulting filled "knot" with a rolling pin into a flat round 24 cm in diameter and 0.5–0.7 mm thick.

    Heat a skillet over medium heat and fry the flatbreads on both sides in a dry skillet for 3–4 minutes per side. To let steam escape, pierce the flatbreads with a toothpick or knife so they do not burst.
