
Winter Borscht with Cabbage
Description
Winter preserves made at home. Making the seasoning base is not difficult: sauté the vegetables one after another and seal the seasoning in sterilized jars. Store it in a cool place. With this seasoning, making your favorite borscht will be much faster and easier. Store in a cool, dark place.

1. To make winter borscht with cabbage at home, you need only a few ingredients. All the vegetables are available year-round. I usually make this seasoning at the beginning of September, and the jars last me until the new harvest begins. First, grate all the vegetables, starting with the carrots.

2. Finely chop the onion and sauté it with the carrots in vegetable oil in a frying pan. Meanwhile, shred the cabbage.

3. When the onion and carrots are sautéed until half-cooked, add the shredded cabbage and cook until tender. When it turns golden, you can remove the pan from the heat.

4. Separately sauté (grated) beets until cooked through.

5. While the vegetables are frying, finely chop the garlic. In this case, it is not recommended to press it through a garlic press.

6. The next step is the tomatoes: dice them and sauté with garlic. Add the bell pepper halfway through cooking.

7. Then combine the onion, carrots, beets, tomatoes with garlic and herbs, as well as the cabbage, and cook all the vegetables until tender. Salt and season to taste. Add the herbs. Transfer all the vegetables to a heavy-bottomed pot, add water, and bring to a boil. Simmer for about 5 minutes, then add the sugar and vinegar. Simmer for another 3–5 minutes, stirring constantly.

8. Transfer the finished borscht base into sterilized jars, seal them, and store in the pantry. That’s how you get homemade winter borscht with cabbage. Now, when the cold weather sets in, making your favorite first course will be much easier.
