
Bolognese (with three types of minced meat)
Description
Preparing the sauce will take you at least three hours, so be ready to spend a long time in the kitchen. For the sauce, you can use fresh tomatoes or canned tomato sauce. You can serve the dish with any type of pasta. Store the sauce separately—do not mix it with the pasta in advance; combine only immediately before serving.

1. Wash, peel, and finely chop the carrots, celery, onion, and garlic.

2. Cut the bacon into small pieces. Heat a pot, add the bacon, and fry over medium heat until fully cooked.

3. Add the vegetables to the bacon and cook for 5-7 minutes, until they become tender.

4. Place beef, veal, and pork ground meat in a saucepan, cook until the meat acquires a golden color.

5. Pour in the milk, bring to a boil, reduce the heat to the minimum, cover with a lid, and cook for 1 hour.

6. Pour beef broth, red and white wine into the pot.

7. Add tomato sauce, salt, pepper, bay leaf, rosemary, nutmeg, and sage.

8. Bring the sauce to a boil, then reduce the heat to low, cover with a lid, and simmer for 2 hours. The sauce should thicken; if it remains too thin, remove the lid and boil for 25–30 minutes. Rinse and chop the parsley, add it to the pot, and season with salt and pepper to taste.
