Bulgarian pie with cheese
Description
Homemade pastry for tea. Bulgarian cheese pie, or Bulgarian pie with brined cheese, is a very simple dish, especially in terms of preparation. Do not forget that brynza is a very salty cheese, so by no means overdo it with salt. You can add pepper. That will only give the pie a piquant flavor. Bulgarian cheese pie goes best with tomato sauce or milk. You can also serve fresh vegetables with the pie. Good choices are: bell pepper, tomato, and fresh cucumber. I wish

Step 1

The first thing to do is knead the dough. To do this, mix the flour with sugar and salt, then add water, yeast, and separately beaten eggs. Knead the ingredients until the dough is smooth and elastic. Place it in an oil-greased bowl. Leave it to rest for 40 minutes. Next, divide the finished dough into 5 parts and roll out disks 25 cm in diameter. Brush with butter.

Step 2

The entire filling should be divided into 5 parts, and each part should be evenly spread over the disk and rolled into a log. Then twist the log slightly, as if making a braid.

Step 3

Prepare a 30 cm rimmed baking dish. Grease the dish with oil and shape the pie in it, laying coils of dough in a spiral. They should not be placed tightly, as the pie will rise during baking and expand to almost twice its size. Let the dough rest for about 20 minutes, covered with a towel.

Step 4

At this time, prepare the filling for the pie. To do this, lightly beat the eggs with sugar and add the milk mixture. Pour the milk filling over the dough and place the pie in an oven preheated to 180 degrees to bake.

Step 5

Bake the Bulgarian cheese pie for about 40–45 minutes. After taking it out of the oven, let the pie rest under a towel for a while (about 10–15 minutes).
