
Bell peppers stuffed with vegetables
Description
The recipe won't take much time. The dish is vitamin-rich, healthy, and very delicious. It's perfect both for a festive table and for outdoor gatherings. The dish looks very impressive thanks to the vibrant colors of nature itself. You can use not only the vegetables listed in the recipe but any others you prefer. Serve hot.

1. Wash the bell peppers, cut off the top part (it will serve as a lid). Carefully remove the seeds without damaging the skin.

2. Pour water into a saucepan and bring it to a boil. Then place the peeled peppers into the boiling water for two minutes, and immediately transfer them to a colander.

3. Peel and wash all the vegetables and herbs. Grate the carrot on a grater, dice the onion and the roots of parsley and celery, and chop the herbs.

4. In a pan, first sauté the parsley and celery roots, then add the onion and carrots. At the very end, add the herbs, salt, and pepper.

5. Stuff the prepared peppers with the prepared filling and place them in a baking dish. In a separate container, mix tomato paste with a little water, stir, and pour the mixture into the dish with the peppers.

6. Place the peppers in the preheated oven at 180 degrees and bake until done (30-45 minutes).
