
Bulgarian Ruguvachki
Description
Delicious baked goods for the whole family. Bulgarian ruguvachki are a traditional Bulgarian pastry that is very similar in composition to chebureki. Ruguvachki are made from fairly thin, light, porous dough. The filling is cottage cheese and fresh greens. The dough is simply incomparable in texture and flavor, so you can also use it for other dishes. I recommend everyone try them! I suggest making Bulgarian ruguvachki and treating your household to wonderful homemade baked goods.

Prepare all the ingredients.

Cut the butter into cubes.

Add boiling water and stir until the butter has dissolved.

Then add the flour.

Knead a soft, elastic dough. It feels very pleasant to the touch, yet supple and springy.

Combine the cottage cheese, herbs, salt, and ground pepper to taste. Mix well. The filling is ready.

Divide the dough into 6–8 portions.

Roll each piece into a circle, 2–3 mm thick, and place the filling closer to one edge.

Pinch the edges together lightly with your hands, then seal them with a fork. You can trim any excess with a knife.

Pan-fry the ready-made ruguvachki on both sides in vegetable oil until golden brown.
