
Bulgarian Tomatoes for Winter

A simple way to stock up for later. I think few people don’t love tomato preserves, so as soon as vegetable season starts, every homemaker tries to put some away for the winter. Our family was no exception: we don’t have a single holiday without tomatoes, and I preserve them using this simple recipe for Bulgarian-style winter tomatoes. Honestly, I have no idea why it’s called that—the recipe came from my grandmother—but one thing I know for sure: these tomatoes turn out incredibly delicious. They’re a great addition to lunch or dinner and a wonderful appetizer on a holiday table. So for everyone who loves vegetables and canning, in this recipe I’ll tell you how to make them. Serve at the table or keep them in the pantry.

First, select ripe and firm tomatoes and rinse them under cold water.

Then sterilize the jars using any method convenient for you; I do this with steam.

At the bottom of each jar, place a bay leaf and herbs, then arrange the tomatoes on top as tightly as possible next to each other.

In a kettle or pot, bring water to a boil and pour boiling water over the tomatoes twice.

After the second time, drain the water and place garlic and black peppercorns on the tomatoes, add sugar and salt, and pour in the vinegar.

And pour boiling water over the jar contents right up to the neck.

Now cover the jars with lids and sterilize them together with their contents for 25 minutes. After sterilization, seal the jars, turn them upside down, and wrap them in a warm blanket. When they have completely cooled, they can be moved to a cool place for storage.
