
Bulgarian milina
Description
Tasty baked goods for the whole family. For the dough you can use whole‑grain or white wheat flour. Or mix both types of flour and knead the dough on that basis. It takes about 400 grams in total, but add the flour in small portions so that the dough becomes soft and elastic. Use plenty of greens: green onions, dill, parsley, spinach, chard, nettles. If the feta is very salty, use a little feta and more cottage cheese; if it is moderately salty, adjust the proportions by adding more feta.

Prepare the ingredients.

Pour the whey into a bowl, crack in an egg, and mix everything together.

Add 2 cups of flour and sunflower oil.

Next, add a handful of flour and knead the dough. Let the dough rest for 15 minutes, covered with a towel.

Prepare the filling. In a bowl, pour the cottage cheese and brynza, add an egg and a little black pepper. Mix everything.

Wash the herbs, dry them, chop them, and add them to the filling.

Divide the dough into 4 parts. Roll out one part thinly, sprinkling it with flour.

We place a quarter of the filling on the thin dough.

Roll into a log. This makes 4 rolls.

Grease the pan with sunflower oil and place the rolls in it. You can arrange them in a zigzag, in a circle, or in strips.

Prepare the topping. Combine the sour cream and 4 eggs. Beat everything with a whisk.
