
Bulgarian banitsa
Description
The pastry is simple and quick to prepare. For the pie filling, you can use cottage cheese or feta of any fat content, as well as sour cream. Children especially love the sweet version, so go ahead and make that one! You'll need filo dough or stretched dough, which you can easily make following a recipe or buy at the supermarket. The sour cream for the topping can be substituted with thick kefir or ryazhenka. Serve with tea or coffee.

Prepare the listed ingredients. Thaw the dough or prepare it in advance.

Break the chicken eggs into a deep container, setting aside a little egg white for the topping. Add the cottage cheese, 50 ml of sour cream, sugar, and salt. Thoroughly mix everything with a fork or puree using an immersion blender.

Separate two sheets of dough and brush them with butter around the entire perimeter.

Place a third of the cottage cheese filling along the edges of the sheets and fold the edges inward. Then roll the two sheets into a log, enclosing the filling inside.

Grease a baking dish with butter and place the prepared roll into it. Similarly, roll two more rolls and place them in the dish. Brush them with butter.

Beat the remaining sour cream, sugar, and chicken egg white, then pour the mixture into the pan over the rolls. Spread the mixture so that it completely covers them. Preheat the oven to 160 degrees and place the pan on the middle rack.

Bake until golden brown, allowing the Bulgarian banitsa to develop a golden crust for approximately 40-50 minutes. Then remove the pan and let the pie cool slightly.
