
Cherry blondies
Description
The blondies bake up simply and quickly. Blondies are always made with some kind of mix-in—in this case, cherries. Also note that you shouldn’t replace brown sugar with white: otherwise both the flavour and appearance suffer. Serve cooled or slightly warm.

Prepare the necessary ingredients.

Warm the butter slightly in a bowl until it softens a little. Stir in sugar, vanillin and an egg. Mix thoroughly with a whisk.

Add the flour in portions, mixing thoroughly each time.

Chop the chocolate with a knife.

Drain the cherries in a colander so the excess liquid can run off.

Add the chocolate and cherries to the bowl with the dough.

Grease a rectangular baking tin with a thin layer of butter, or line it with baking parchment. Pour in the batter and level the surface. Bake in an oven preheated to 180 °C for 30–35 minutes.

When the time is up, remove the cherry blondies from the oven. Leave them in the pan for 1 hour.

After that, transfer to a cutting board or serving dish. Serve at the table, sliced into portions.
