
Pancakes in a wok
Description
Perfect for tea and coffee. The pancakes cooked in a wok are very similar to Armenian lavash or Mexican tortillas. The recipe for making wok pancakes is simple. The pancakes cook very quickly and with minimal fat. It's best to place the cooked pancakes between damp towels—they will stay flexible, allowing you to wrap any filling inside. However, if you're making them as a bread substitute for soup, skip the towel step :) The most important thing is to roll them extremely thin, about 1 mm, and cook them on a hot wok. You've got this! Serve cooled or slightly warm.

Mix the flour with salt and baking soda, add vegetable oil and hot water. Knead an elastic dough that will slightly stick to your hands, wrap it in plastic wrap, and let it rest for 20–30 minutes.

Divide the dough into small pieces.

Roll out very, very thin and trim to the size of the wok bottom. Fry on a dry skillet for about 20 seconds on each side.
