1. Prepare the pancake batter. To do this, mix room-temperature milk, add previously sifted flour and baking powder, crack in an egg, and add a pinch of salt and sugar. Mix thoroughly until no lumps remain, then let it rest for 20 minutes.

2. Place a frying pan on the heat and pour in a little refined oil. Ladle the batter onto the hot pan, spreading it evenly, fry the pancake until a golden crust forms, then flip it over.

4. For the filling, take cheese, mackerel, garlic, onion, and tomatoes. Separate the fish into pieces, remove all bones, grate the cheese on a coarse grater, chop the onion finely into small cubes, peel the apple and also grate it on a coarse grater, finely chop the tomato, and press the garlic through a garlic press. Mix all ingredients in a bowl and blend thoroughly, then add basil.
