
Pancakes with cheese and herbs
Description
The baking is simple and quick. Pancakes are a very versatile dish. I especially like making savory, rather than sweet, snacks out of them. To prepare pancakes with cheese and herbs, I make a standard pancake batter—it turns out moderately salty and sweet, so you can use it later for both sweet and savory pancakes. Serve this snack with various sauces or as a side to other dishes. Serve cooled or slightly warm.

Make the batter: separate the egg whites from the yolks. Beat the yolks, add flour, milk, and water, then gradually mix in the beaten egg whites. Knead the batter and fry the pancakes.

I use hard cheese, such as Russian or Dutch. For herbs, parsley or dill.

Grate the cheese on a grater and chop the herbs.

Fold the pancakes with filling into envelopes. Place them in a preheated oven for 10 minutes, until the cheese melts. Alternatively, you can reheat them in the microwave. Serve the ready pancakes with cheese and herbs together with sour cream!
