Description

Homemade treats for tea. Long ago, I was afraid to make pancakes. Now I can't even imagine that this simple dish could be difficult. But everything comes with experience and practice. When you do something often, you no longer think about it—it becomes second nature. Unlike Easter bread, which I bake only once a year. With pancakes, everything is much simpler. Serve them cooled or slightly warm.

    Beat the eggs in a deep bowl. Mix them with milk and vegetable oil. Add sugar, salt, and baking powder. Gradually add flour, sifting it through a sieve. Stir until smooth and no lumps remain. Make sure the batter is thin. Otherwise, you'll end up with pancakes or American-style pancakes.

    Heat the frying pans. I like to make pancakes quickly, otherwise it takes a lot of time! So I cook on at least two pans at once. Pour a ladleful of batter onto the hot pan, spreading it evenly across the surface. Thanks to the baking powder, the pancakes turn out porous. Fry the pancakes, as usual, on both sides, and immediately cover them with a towel. This way you get little suns.

    This time, I'm making not just regular pancakes, but festive ones. Instead of spending money on seaweed and other sushi ingredients, I've simply redirected my funds elsewhere. So my pancakes will feature two kinds of caviar, salmon, and cream cheese. I slice the salmon into thin pieces and place them onto the pancakes. Then I add caviar on top— one pancake will have red caviar, the other black. After all, it's an anniversary! Next, I spread a stripe of cream cheese alongside, then roll up each pancake.

    Now it's time to beautifully present this luxurious dish! I slice the rolled-up crepes diagonally and arrange them neatly on a plate. The birthday girl will be delighted!
