
Blini with minced fish
Description
It goes perfectly with tea and coffee. As a base I use haddock mince that I make myself. You can use any mince you like—store-bought or homemade. In addition to the mince we’ll add a little bacon, for a very aromatic and tasty filling. You can serve the pancakes with sour cream and fresh vegetables and herbs. They can be served with tea or coffee.

Prepare the ingredients.

Transfer the fish mince to a hot skillet greased with vegetable oil. Add the chopped bacon, salt, and pepper to the same pan at once. Fry, stirring, for 10–12 minutes.

Set the finished mince aside and let it cool.

Pour milk into a deep bowl, add an egg, and a pinch of salt.

Gradually add wheat flour to the bowl in portions, mix everything together, and make ordinary pancake batter of medium thickness.

Add a little vegetable oil to the dough — 1–2 spoonfuls.

Heat a crêpe (or blini) pan and lightly grease it. Pour the batter into the pan and cook the blini for 30 seconds on each side.

Place 1–2 tablespoons of filling on each cooked pancake.

Roll the pancakes into rolls and serve.

Remove from the oven and serve warm or at room temperature.
