
Pancakes with liver filling
Description
The recipe won't take much time. For the pancakes with liver filling, you can use any type of liver to your liking. I recommend using good quality butter with over 80 percent fat content. You'll need to sauté the onion and carrots—either together with the liver or separately, as you prefer.

1. Prepare the dough. Into the flour placed in a bowl, break an egg, add a pinch of salt and a spoonful of vegetable oil. While stirring, gradually add water until a smooth, lump-free liquid batter forms.

2. Let's move on to the filling. Wash the liver and cut it into small pieces.

3. Peel and wash the onion and carrot. Chop the vegetables.

4. Pour a few tablespoons of vegetable oil into a pan, lightly sauté the onion and carrot. Then add the liver and cook, stirring, until done. Finely chop the cooked liver with a knife or pass it through a meat grinder.

5. The filling is ready! It's time to cook the pancakes. Heat a frying pan over medium-high heat, grease it with oil, pour 3-4 tablespoons of batter into the heated pan, and spread it evenly by tilting the pan. Fry the pancake for about 40 seconds on each side.

6. Wrap the filling in the ready-made pancake, slightly warm the pancake in oil, and serve with sour cream, your favorite sauce, or fried onion. Liver-filled pancakes are ready!
