
Pancakes with filling

Cottage cheese and cheese go perfectly with any greens, so feel free to add spinach, parsley, basil, or any other you like. By the way, you can fill these pancakes with any filling you prefer. Prepare all the ingredients from the list. You can use cottage cheese of any fat content. Today, my herbs are onion and dill.

In a deep bowl, beat the egg with salt and sugar.

Mix until smooth.

Then add vegetable oil, mix, pour in boiling water in a thin stream, and immediately stir quickly. Let the dough rest for 10–15 minutes.

Crumble the cottage cheese in a blender or mash the lumps with a fork.

Add chopped fresh herbs, salt, and ground pepper to the cottage cheese to taste.

Take a frying pan with a diameter of 18-22 cm—a crepe pan or any pan you find convenient for baking pancakes. Heat the pan until hot. Grease it with vegetable oil. Set to medium heat and pour in a small amount of batter, then tilt and rotate the pan to spread the batter evenly over the entire bottom. Immediately, while the batter is still liquid, place 1-2 tablespoons of filling on one half.

Using a spatula, lift the free half of the pancake and cover the filling. Carefully press the edges together so they stick, taking care not to tear the dough.

Cook the pancakes on both sides until golden brown. Grease the pan with oil as needed, if they start sticking to the pan.
