Pancakes with liver pâté

Description

You can use any chicken or pork offal you prefer: liver, gizzards, hearts, etc. To prevent the filling from becoming too dry, add a little of the broth in which the offal was boiled while mincing. You can even add sour cream or mayonnaise, if the pancakes will be served within 3-4 hours and quickly eaten. Feel free to add grated carrots, chopped tomatoes, or other ingredients to the fried onions—don't limit your culinary imagination. Serve cooled or slightly warm.

    Prepare the listed ingredients. You can use kefir of any fat content.

    Rinse and boil chicken hearts for 30 minutes in advance, then add the liver and cook for another 10 minutes. Cool in the refrigerator for 1 hour. Keep in mind that hearts and gizzards take the longest to cook, while the liver only needs 8–10 minutes.

    Pour the kefir into a deep container, add the chicken eggs and the spice. Whisk everything with a whisk for 2-3 minutes.

    Pour in the boiling water and mix quickly to prevent the egg mixture from curdling. Add the high-grade wheat flour and incorporate it with slow, steady motions.

    Pour in the vegetable oil and mix once again — the pancake batter is completely ready!

    Heat a frying pan on the stove and grease it with oil for the first time. Pour in a little pancake batter, spread it evenly, and cook the pancake for 1-2 minutes over medium heat.

    Carefully flip it to the other side using a silicone spatula and cook for another 1-2 minutes, then transfer the pancake onto a plate. Cook the remaining pancakes in the same way.

    Place the boiled offal into the grinder bowl. If they are large, cut them into pieces or cubes.

    Dice the onion and sauté in vegetable oil in a pan for about 3-4 minutes. Add to the container with the offal.
