Instructions
- 1
Step 1

Prepare the listed ingredients.
- 2
Step 2

Rinse the chicken gizzards thoroughly in water, remove the fat from them — it is often very dirty. Rinse again.
- 3
Step 3

Place the washed chicken gizzards in a cauldron, sauté pan, or kettle and cover with warm water. Add two pinches of salt and bay leaves, simmer for 1.5 hours until tender.
- 4
Step 4

Crack the chicken eggs into a deep container, add two pinches of salt and whisk. Pour in milk of any fat content and whisk again.
- 5
Step 5

Add wheat flour and gently fold it into the egg mixture, so there are no lumps. Let the dough rest for 15 minutes. Pour vegetable oil into the dough and stir.
- 6
Step 6

Heat the pan and cook golden pancakes, frying them for about a minute on each side.
- 7
Step 7

As soon as the chicken gizzards are tender, turn off the heat.
- 8
Step 8

Remove them from the broth and cut into small cubes. Rinse the green onion stalks, chop them and mix with the chopped offal. If desired, you can fry the mixture in a pan with a small amount of vegetable oil.
- 9
Step 9

Place some of the filling on the edge of the pancake.
- 10
Step 10

Roll it up into a roulade. In this way, roll up the remaining pancakes as well.
- 11
Step 11

Place them on a plate and serve them warm, optionally with sour cream, garlic sauce, or ketchup.
