
Pancakes with chicken liver and pear

When ordinary pancakes are already getting on your nerves, try pancakes with chicken liver and pear :) Sorry for the tautology, but truly, pancakes with liver and pear prepared according to this recipe turn out very original and unusual in terms of flavor. You get liver, pear, and mustard here—the combination of these products creates something completely indescribable in words. You have to try it. Which is exactly what I wish for you :) Good luck! Mix whole-grain mustard with 3 tbsp of olive oil. Stir thoroughly.

In a frying pan, heat 1 tbsp of olive oil and 1 tbsp of butter, then add the coarsely chopped chicken liver. Fry for 2–3 minutes, constantly turning the pieces.

Then add balsamic vinegar and salt to the pan. Stirring, fry for another 2–3 minutes.

Take the cooked liver off the stove.

Place a couple of pieces of liver in the center of each pancake, along with a pear sliced very thinly (I do this using a vegetable peeler).

Pour the mustard dressing over the filling and lightly drizzle with lemon juice.

If desired, you can also add arugula to the crepe—I did just that. Roll up the crepes and serve immediately.
