
Blini with salmon
Description
The bake comes together simply and quickly. Pancake rolls turn out appetizing and incredibly tasty, and your friends and family are sure to love them. For a filling of soft cream cheese and salmon, just about any pancakes will work; I usually make them with plain milk pancakes, but you can bake whole-grain ones or any others you like. If you add fresh cucumber or avocado to the filling, this appetizer will be a wonderful choice for any holiday table.

Prepare all the ingredients according to the list. You can use any red fish: pink salmon, chum salmon, keta, trout. You can either buy ready-made fish or cure it yourself. You can make the pancakes whichever way you like best; the important thing is not to make them too sweet.

Crack the egg into a deep bowl. Add salt and sugar.

Mix.

Pour in the milk.

Add the flour.

Mix until homogeneous.

Add the butter.

Mix and pour in boiling water in a thin stream, stirring constantly.

The dough is ready. Let it rest for 10–15 minutes.

Heat the pan well, grease with vegetable oil, and fry the pancakes on both sides until done.

Brush the finished pancakes with butter so they don’t stick together. For the amount of filling indicated, you will need 6–10 pancakes, depending on their size and how much filling you spread in each one.

If you have salted fish in steak form, it is easier to cut it into sticks; if it is a large piece, cut it either the same way—into sticks—or into thin slices. Rinse the lettuce leaves and pat them dry.

To make the appetizer, place a lettuce leaf on a crepe. Spread cheese in a strip closer to one edge. Lay the salmon on top of the cheese.
