
Pancakes with potatoes and mushrooms
Description
This is a very simple recipe for pancakes with potatoes and mushrooms that has saved me more than once. The dish is prepared very quickly and doesn't require any special culinary skills. In fact, this is one of the rare cases when you don't need to try making the pancakes very thin, otherwise the filling might easily break through. Make them a bit thicker, and I wish you good luck!

1. Prepare the dough – add eggs to the milk and beat until smooth together with sugar. Then gradually add flour. You can slightly salt the pancakes and add a pinch of baking soda.

2. Fry each pancake made from this batter on both sides. Stack them and let cool. Meanwhile, boil the potatoes.

3. Mash the potatoes into a puree—you can add salt, sour cream, milk, or cream, depending on what you're used to using for your puree.

4. Fry the onion in vegetable oil together with the mushrooms. Then mix this combination with the mashed potatoes and the remaining butter.

5. Evenly distribute the filling on each pancake and fold into a square. That's it! Serve with sour cream!
