
Crepes with figs
Description
The pastries come together easily and quickly. You can make the pancakes with milk, kefir, or baked milk — use whichever dairy you prefer. Avoid overfilling them so the filling doesn’t leak out of the rolled pancakes. Brew some fragrant tea or coffee. Serve with tea or coffee.

Prepare the ingredients listed. Buy figs of any variety.

Crack the chicken eggs into a deep bowl, add 1 tablespoon sugar and salt, and whisk everything with a whisk for about 1–2 minutes.

Pour in milk of any fat percentage and whip again. Add wheat flour and mix gently.

Pour in odorless vegetable oil and mix. Leave the dough for 15 minutes for the gluten to develop.

Rinse the figs in water and cut off the stems. Cut the fruits into pieces and purée them with an immersion blender or process them in a chopper until smooth.

Transfer the fig purée into a non-stick saucepan or kazan, add the remaining sugar, and simmer for about 8–10 minutes.

Heat the frying pan and brush it lightly with vegetable oil the first time. Then pour on a ladleful of batter and spread it evenly over the pan bottom. Cook the pancake 1–2 minutes per side until golden brown.

In this way, bake the remaining pancakes too. Spoon 1 tablespoon of filling onto a pancake and roll it up into a small roll. Roll up the remaining pancakes as well, filling them with the filling.

Serve the pancakes to the table warm or cold with tea, coffee, lemonade, or warm milk.
