Pancakes with mushroom filling and eggs (a recipe for gourmets)

Description

The recipe won't take much time. As I've already mentioned, this dish consists of three steps. First, prepare the filling with onions, eggs, and mushrooms. Then, fry the pancakes (I make them with milk). Once everything is ready, simply assemble the blintzes. And your dish is ready to be served! Here's how:

    Slice the onion, but not too finely. It should be noticeable in the filling!

    Sauté the onion in a pan with vegetable oil, but do not fry it until it turns dark.

    Slice the mushrooms. It is preferable to use exactly button mushrooms. Do not chop too finely.

    Sauté the mushrooms in the same butter used for frying the onions, evaporating their moisture. If there is not enough butter, add a little more, but not too much.

    Chop the hard-boiled eggs with an egg slicer (into strips).

    Place the eggs into the sautéed mushrooms, gently and thoroughly mix, then add the fried onions and 50 grams of butter. Simmer covered for about 20 minutes over very low heat.

    Prepare our dough. Break 2 eggs and add 2 tablespoons of granulated sugar. Beat the mixture (preferably with a mixer, but you can use a whisk). Activate the baking soda with vinegar in a teaspoon. Pour in 0.5 liters of milk and gradually add 3 cups of flour, constantly stirring. Add 2 tablespoons of vegetable oil and mix in the remaining 0.5 liters of milk. The dough is ready for baking!

    I fry pancakes on a pancake pan (a very convenient tool!).

    I roll the pancakes into rolls. You can cut the roll diagonally after filling, if it turned out too large, as in my case. That's it!
