
Pancakes with trout
Description
To make delicious pancakes, purchase lightly salted or smoked salmon slices. You can also salt a portion of the fish at home if you have spare time. Be sure to remove any bones from the salmon slices before placing them on the cheese layer. Serve the pancakes with salmon chilled.

Prepare the listed ingredients. You can replace kefir with liquid sour cream or ryazhenka. Be sure to use water; otherwise, pancakes made solely with kefir will tear when flipping.

Put chicken eggs into a deep container, add salt and kefir of any fat content. It is best to use ingredients at room temperature.

Whisk all the contents of the container for about 2–3 minutes. If desired, you can add chopped dill or any other herb, spice, or seasoning to the container.

Add the premium wheat flour and mix it in with a whisk, but do not beat it to avoid lumps. Finally, pour in the odorless vegetable oil and stir. Let the batter sit at room temperature for 15–20 minutes. During this time, the gluten will activate, making the batter thick and smooth.

Heat a skillet on the stove and grease it with vegetable oil. Using a ladle, pour some batter onto the skillet and cook the pancake for 1 minute until golden brown. Be sure to reduce the heat to medium, otherwise the pancakes will burn.

Slide a silicone spatula under the pancake from the side and flip it over. Cook for another minute.

Place the delicious pancakes in a stack on a plate, cutting board, or dish. Let them cool.

Then spread a portion of the crepe with cream cheese and place the salmon slices on it. Roll it up into a tube.
